Lahsun Achar


Lahsun (garlic) Achar  ( लहसुन आचार )

Ingredients
250 gm lahsun (Garlic)
500 gm unripe mango 
2 spoon saunf
2 spoon mustered seed
2 spoon methi
1 spoon dhania
1/4th spoon heeng
1 spoon chili (kuta) powder
2 spoon haldi (dry grinded)
1 spoon jeera
1/2 spoon kalunji (कालुंजी)
1/2 spoon ajwain
salt according to taste
200 ml Mustered oil

Method 


Wash mango with water , wipe out water , then peel of  mango , kadookus in small pieces.
Peel of the Lahsun 
Mix lahsun , kadookus mango ,salt, heeng and haldi and put in steel pot , keep this in sunlight 2 or 3 days so that water gets removed.
Take  saunf, methi , jeera , dahnia,  in a pan and fry dry on mild flame and then add kalonji ajwain ot it
Grind this masala with mustered seed in a grindner add kuti  chilli to it.
Add this grinded masla to, lahsun and mango mixture add little mustered oil, sabut saunf , kalonji and ajwain, and keep this mixture again for 2-3 days in sun light
Now put this finally prepared mixture in GLASS pot and and add mustered oil in sufficient amount. 
Keep it in sun light for 2 - 3 days,  It is ready to serve.

SWEET KHAJURI TOAST

Khajoori Toast (silver foiled)




Ingredients

      Take bread slices and cut in round shape with the help of sharp edged katori or glass.
      ½ liter Milk and 25 gm khoya
      10 pieces of kaju
      10 pieces of badam
      10 pieces of Kishmis
      ½ teaspoonful choti  elaichi powder
      15 Khajoor (dates) without seeds 
      silver foils

    Preparation Method

          Boil  Milk , add sugar and Khoya for making it thick
          Add elaichi powder and keep to cool
          Cut all dry fruits in small pieces
          Deep fry the round shaped bread pieces and keep   it    on tissue paper to remove extra oil
          Make Paste of khajoor and add some dry fruits, it is the filling material
          Put some filling material on fried bread slice and cover it with another bread piece
          Dip slices in the thickened milk and garnish with remaining dry fruits and put silver foil (optional) on it.
          Now it is ready to serve either hot or cold

        Mewe ka Ladoo



        Mewe ka Ladoo
        Ingredients
        2 cup wheat flour
        1 cup deshi ghee
        15 dates (Chuhara)
        10 piece Makhana
        10 piece Kajoo
        10 Badam
        25 piece kishmis
        1 cup grinded sugar

        Method of Preparation

        -Remove seeds from dates and keep in bowl and add milk so that it is just dipped in it.
        -Keep this in refrigerator overnight, Grind the soaked dates by mixer.
        -All mewa should be chopped in small pieces.
        -Pour little ghee in pan and fry mewa to golden brown and keep it in a bowl.
        -Now separately fry grind-ed dates in good amount of ghee till the ghee start separating from grind-ed dates. Now add golden brown mewa in it and keep it.
        -Take wheat flour and fry in sufficient amount of ghee under mild flame till the fine aroma start coming and flour becomes golden brown then put off gas burner. And keep to cool down to bearable warm.
        -Finally add all mewa ,  grind-ed  dates and sugar to golden brown wheat and mix it properly and make ladoo while little warm, if you find it dry sprinkle little milk and made ladoo
